Pâte à Choux or Choux pastry dough is what is used in making so many sexy French treats… Éclairs, Gougères (savory cheese puffs), Choux Salé, Chouquettes, Profiteroles (sweet cream puffs), Saint Honoré-Piece Monté (aka Croquembouche)…
During this 3-hour class, Alisa of Sweet Pea Paris, an American chef and cook book author who has called France her home for nearly 20 years now, will first teach you how to make the basic Pâte à Choux pastry dough before exploring the nearly infinite possibilities of what you can do with it!
You will make 4-5 sweet and savory (sucré et salé) French delicacies, along with the fillings and pastry creams that go in them. While making your delicious patisseries, you’ll get hands-on instruction, learn new baking techniques, hear stories of life in France, and even a get a glimpse of the river Seine.
Once the baking’s finished, it’s time to untie your apron and gather around Alisa’s big country-style table to snack on your choux and sip Champagne! La vie est belle!
Alisa welcomes you into her Parisian home and teaches you how to cook French food with detailed, hands-on instruction. While guiding you through the recipes she’ll also share French culinary facts, current customs, and helpful tips. Each class ends with everyone gathering around her large dining table, enjoying the meal you’ve made accompanied by specially selected wines. All classes and tours are for small groups of no more than 6 people and are offered in English, or French upon request.
